Calcutta people just cannot survive without the famous "CALCUTTA BIRIYANI" yes the moment biriyani name comes in anyone's mouth ah slurrps!!.Personally I can just eat biriyani as biriyani but when am out with friends there is  always one person saying biriyani is too dry,gets stuck on my throat .So how about we order some side dish gravy to go with biriyani. In Calcutta we have numerous biriyani parlours I would say namely the all time every Bengali's favorite ARSALAN, ZEESHAN, AMINIA and rest even some big-shot restaurants  serve amazing biriyani. I love treating my friends with mutton biriyani and Mutton Handi whenever they are home. So flowing with today's discussion I present to you my version of "MUTTON HANDI".



                                                            
Mutton Handi
Ingredients
Mutton- 500 gms

Onion Paste- 3 diced onions

Ginger Garlic Paste- 4-5 tablespoons

Yogurt 6-7 tablespoons

Cashewnut Paste

Ghee" 5-6 tablespoon


Spices

Cardammon-2-3 small cardamoms

Clove-2-3pieces

Bayleaf- 2 leaves

Cinamon Stick- 2 small

Garam Masala Powder- 2 tablespoon

Kasuri Methi Powder- 1 tablespoon

Chilli Powder- 2 tablespoons

Kashmiri Red chilli Powder- 3 tablespoon

Turmeric Powder- 1/2 tablespoon

Green Chillies- 2 finely sliced

Sugar- 1 tablespoon for colours and taste

Salt to taste

Chopped Coriander for garnish



Method:


1.Marinate mutton with 2 tablespoon ginger garlic paste , fry the marinated mutton in  refined oil until light brown then boil it for 20 minutes on pressure and keep aside.

2.Heat the oil/ghee in a pan fry minced garlic 1 tablespoon.

3.Put the onion paste in it and fry until light brown, then put ginger garlic paste 3 tablespoon and cook for 2-3 minutes.Next put the yogurt and also the cashew nut paste and cook for 6-7 minutes.

4.Put garam masala powder 2 tablespoon .Then put 2 small cardamon, 2 clove,  1 cinnamon stick and 1 bay leaf.Then kasuri methi 1 tablespoon, 1 tablespoon kashmiri mirch, 1 tablespoon red chilli powder and cook the gravy.

5.Now put the half boiled mutton pieces  and cook for 10-12 minutes.Put salt and sugar half tablespoon  as per your taste.

4.Lastly when the mutton is done put the chopped coriander from top for garnishing and taste.

Mac &Cheese

Comfort food  for me has to be one which gives you happiness ,a blast in your mouth everytime you feel maybe sad maybe down for any reason whatsoever.This one dish I bet will make you happy and specially childrens love it.Yes many of you  might already know it for those who couldn't guess its my alltime favourite "Mac &Cheese".A very popular and lipsmacking dish for cheese lovers or more precisely the national dish in USA you can say.It can be prepared using otg or oven but for those who dnt have an oven not to worry you can prepare it in gas oven too.Here goes the recipe.      







  Ingredients:
  200gms of pasta (any shape or size)

  Grated Cheese- Mozzarella(1cup)

  Grated cheese-  Parmesan(1cup)

  Milk- 1cup

  All purpose flour- 3-4tablespoon

  Salt to taste

  Butter-2tablespoon

  Black pepper-1tablespoon

  Breadcrumbs- 1 cup

  Oregano- 1/2tablespoon(optional)

  Chilli Flakes -1/2tablespoon (optional)

Method:

1.Boil the pasta  with half tablespoon oil.Drain it and keep aside to cool

2.Take a pan heat butter put flour and keep stirring to avoid forming lumps,put the milk at this point and stir till liquid  form.

3.The white sauce will be done put pepper , salt and mozarella cheese .

4.A thick sauce will be prepared ,put the boiled pasta in it n mix well.

5.Spread this mixture in a flat tray, put the breadcrumbs over it n spread the parmesan cheese all over it.

6.Preheat oven at 180 degree.Bake the pasta for 15-20mins till a brown crust is formed on top at 220 degree.

Serve hot...

Fiery Fried Mutton

My Dad's all time favourite food item on Sundays is mutton and to impress his taste bud is like a big mission for me always.Being a bengali sunday lunch and dinner has to be mega bites with which you can survive the coming week.So one fine sunday I decided to try something fried with little gravy and what can else be my favourite ingredient except MUTTON !!.Hence the "Fiery Fried Mutton" recipe came out from my pandora's box. Very easy to prepare.Here goes out the recipe for you all.

Ingredients:

Mutton- 500 gms

Onion- 3 finely diced onions

Ginger Garlic Paste- 4-5 tablespoons

Yogurt 6-7 tablespoons

Ghee" 5-6 tablespoon

Cumin Powder- 2 tablespoon

Coriander Powder- 1 tablespoon

Garam Masala Powder- 2 tablespoon

Kasuri Methi Powder- 1 tablespoon

Chilli Powder- 2 tablespoons

Kashmiri Red chilli Powder- 3 tablespoon

Turmeric Powder- 1/2 tablespoon

Green Chillies- 2 finely sliced

Sugar- 1 tablespoon for colours and taste

Salt to taste

Chopped Coriander for garnish



Method:


1.Boil mutton with 1 tablespoon of ginger garlic paste beforehand.

2.Heat the oil in a pan put cardamom, clove,  cinnamon stick and bay leaf then put the sliced onions and fry until bit brown ,put the sugar in this time to give color.

3.Now put the half boiled mutton pieces, rest of the ginger garlic paste and fry well in the mean time put yogurt & all the spices one by one & keep frying the mutton until oil releases from the mutton. Put salt as per your taste.

4.Fry the mutton until soft n lastly put the chopped coriander from top for garnishing and taste.
